Hey does anyone have experience making the Momofuku bo ssam with a smaller piece of meat than the recipe calls for? I have a 3-lbs Boston butt (the recipe calls for 8-10 lbs) and wondering how to adjust cooking time https://t.co/BHAyk8HSwS
