This soup is perfect for when you’re craving an easy, classic chicken soup with a little flair, thanks to the green chile. This soup does resemble Pozole Verde, a traditional Mexican soup/stew, but it doesn’t have hominy or any peppers like poblano or jalapeño (or any tomatillos for that matter).

I’ve been seeing these “2-ingredient” soft pretzels all over Instagram just using Greek yogurt and self-rising flour, and I wanted to make some of my own! My favorite soft pretzel to get at the mall was always a cheddar jalapeño, and I still love them to this day! I made these cheese-less, but you can always sprinkle on some cheddar before baking.

Last year, I attempted to make my first galette, and even though it was messy and overfilled, I was hooked! I had gotten a whole box of stone fruit from a local farm, and turning it into a galette was not only fun but tasty. I love that you can make them sweet or savory, and I’ve truly never made a bad combo. As someone who does not consider herself good at baking, I love that galettes have that rustic look, and even when you think you were messy, it always comes out so pretty.

Chag Sameach! I know I’m a little late on coming out with this matzo ball soup recipe since the first night of Passover has come and gone, but better late than never!
