The other day, at the new and very hip One Club Row, I enjoyed a delicious dish of asparagus with labneh and hazelnuts. Sadly, my waistline disagrees, but I’ve discovered a magic secret ingredient that means I don’t need to add cream or make bechamel. I’ve also been making bruschetta with leftover bread in the airfryer, and I’ve discovered that with a few minutes in the food processor, they can be turned into the best toasted breadcrumbs ever.

While it looks superbly fresh and is, I believe, healthy, most of the ingredients are in my store cupboard or freezer. It’s also a flexible recipe – in fact I made this last week using cherry tomatoes. I also make it using mi-cuit roasted tomatoes that I grew myself and froze last autumn. I added in a handful of olives this time too.

I love standing and stirring the rice, adding in the stock little by little and watching my risotto come together. Saffron risotto is something of a special occasion treat for me – and perfect topped with scallop, halibut or chunks of monkfish. I sometimes throw in whatever I have in the way of green vegetables (peas, tenderstem broccoli or, as in this case, rocket) to add a little interest.
