To quickly peel potatoes, score them around the middle and then boil until easily pierced. This trick works best with Russet potatoes. Cool the potato in an ice bath until it's safe to handle. When you go through as many servings of mashed potatoes as my family does in a typical week, you’re always on the lookout for a new tip or trick to improve this regular side dish.

For as long as I can remember, my mom and I have obsessed over this one chicken salad sandwich from a restaurant on the Upper East Side of Manhattan. We’d go far out of our way to get it, buy it for each other as a surprise treat, and talk about it. It’s a must-order any time we go, and if we’re in the mood for something else, we’ll order it to go or as a side. (A side sandwich, why not?) If we’re anywhere in the vicinity, even if it’s not time for a meal, we’ll pick up two for later.

Soon after my mom and dad had their first kid (my older sister), they purchased their very first microwave. It was a big deal. This was the late 1970s, and microwaves had just started being manufactured and sold for less—meaning consumers started to buy them en masse. My mom decided to take a microwave cooking class.

I love all brisket, whether it’s smoked, dry-brined, or roasted. But my favorite brisket is a bare-bones, 3-ingredient recipe my family has been making for years. I’ve tried other recipes, but this is the one I make year after year—once or twice each fall, winter, and spring. When I’m not making it, I’m dreaming about it. The recipe comes from my mom’s cousin, who we affectionately called Mickey.
