It was that bleak October morning, sun hidden behind the clouds, pewter gloom cast over the dining hall. Unruly uniformed students, then stillness. He saw her. Translucent, almost, and alone. Her head twisted as she stared into the courtyard, chin nested in her hand, contours of her neck exposed. The tendons stretched, the angles jagged from protruding bones.

IntroductionThe COVID-19 pandemic exposed weaknesses in food production systems [1], affecting food availability and prices [2], which, along with economic fluctuations and increased unemployment [3,4], sharply increased food insecurity rates across the United States [5]. In addition to magnifying pre-existing food insecurity among low-income households that were already struggling to meet their needs [6], many households experienced food insecurity for the first time [7].
