“Caviar is something that seems unapproachable or unattainable for a lot of people,” Bell said. “We wanted to do it in a way that was approachable and affordable, so that people who might not usually be able to try caviar could try it in a fun, casual setting.”Another menu item hearkens to Bell’s time in New York as a chef in his 20s, just starting out. “The first place I lived was in Midtown, and there was a TGI Fridays around the corner,” said the 39-year-old.

As Paul told this reporter, Kramer moved with his family from Austria to the U.S. and eventually landed in San Francisco, where he worked in the restaurant industry. Last month, just six weeks after opening Pizzeria Cardamomo in downtown Redwood City, husband-and-wife owners Momo Farouq and Sarika Batra found themselves in an unexpected predicament. “We ran out of cloth napkins!” said a surprised Batra, who borrowed some from nearby Donato Enoteca. Business at Cardamomo was so good — twice as busy as projected, given that it was still in soft-opening mode — Farouq and Batra turned away dozens of diners that Friday night.

Le Soufflé is a unicorn in Carmel. Amid the posh downtown, which sees an influx of visitors on weekends, the restaurant stands out for a number of reasons: Its dining room is tiny — just four tables. It focuses on a single, uncommon French dish. And it’s only open on weekdays — for lunch. The restaurant, which has a staff of two, does not advertise, use social media or rely on public relations.
