1. IntroductionVitamin A is a compound with the biological activity of retinol. There are two primary groups of substances that provide retinol bioactivity. One is preformed vitamin A (retinol) and the other is provitamin A carotenoids chiefly comprising beta-carotene, alpha-carotene, and cryptoxanthin [1,2]. As an essential fat-soluble micronutrient, vitamin A cannot be synthesized by the human body and needs to be obtained from a regular diet.
