    Serves 4300g leftover mashed potatoes200g Rooster Potatoes, grated1-2 tbsp plain flour2 tbsp fresh sage50g Irish butter200g Irish bacon, cooked (optional)4 eggsDrop of lemon juice or vinegar1 tsp sea salt (optional)Salt and pepperSalad leaves to serve (optional)4 tbsp Hollandaise sauce (see kevindundon.com for recipe) Grate the potatoes into a bowl. Squeeze to remove excess water if needed. In a large bowl, combine the leftover mashed potato with the grated raw potato, and half the sage.
