In a dutch oven or soup pot over medium heat, brown the chicken thighs on both sides in a little bit of oil. 2 boneless skinless chicken thighs, 1/2 tablespoon avocado oilAdd the chopped veggies once the chicken is browned and cook for 2-3 minutes to add flavor. 2 stalks celery, 2 carrots, 1 medium onionAdd in the water and chicken bouillon, cook until the chicken is fully cooked and veggies are tender.

In a mixing bowl, whisk together the whole milk, half and half, sugar, and peppermint extract until the sugar is fully dissolved. You can use a drop or two of green food dye if desired. 1 cup whole milk, 3/4 cup heavy cream, 1/3 cup granulated sugar, 3/4 teaspoon peppermint extract, food dyePour the mixture into a CREAMi pint and secure the lid. Freeze for at least 24 hours. Remove the lid and place the pint into the outer bowl.

You can also do this in a blender, but not too high of a speed or you will create too much air bubbles. 1/3 cup super fine granulated sugar, 1 tablespoon instant vanilla pudding mix, 1 cup whole milk, 3/4 cup heavy cream, 1 teaspoon vanilla extractOnce the mixture is combined, pour into the Ninja Swirl pints, place on the storage lid and freeze for 24 hours.
