Wedged between a construction site and a vacant cafe on Kent Street in Sydney’s CBD is The Sambal, an unassuming mid-sized Indonesian restaurant. When it opened its doors in September 2017, it was one of the only eateries of its kind in the area. But co-owner Nessiana Pamudji says that's changed in recent years thanks to a burgeoning demand for Indonesian cuisine.
