Use any packaged supermarket coleslaw you like, eg finely shredded slaw, classic coleslaw or an Asian slaw. When you're putting the spring rolls into the air fryer to cook, try not to let them touch on the sides as this will make them stick together and they won't brown evenly. If you've got too many spring rolls for your air fryer basket, simply cook them in two batches rather than sit them on top of each other.

You'll need to cut the pumpkin into 1cm pieces. This cooks the pumpkin quicker and you get lots of sweet, golden caramelised edges. We used regular tortillas that are around 19cm in diameter. You can make smaller quesadillas using mini tortillas but they might be a little harder to cut into faces. For the chicken, use barbecued chicken or leftover roast chicken from the night before. You could also use thinly sliced cooked sausages or mince if chicken isn't a favourite in your house.
