Jex trained in Jamaica and Canada, and has a long history in the industry, including at five-star resorts and on cruise ships. Now he has pulled together his takes on Caribbean and other cuisines into convenient meal packages.

    Spotlight: A Batch Made in HeavenIt’s the stuff sweet dreams are made of — a food truck dedicated almost entirely to the love of cookies. Orangeville-based Cookies by Gia bakes big, chewy cookies with flavours including OG Milk Chocolate, Red Velvet and Coconutty, plus shortbread and gingerbread at Christmastime. Pietra “Gia” Velinor opened the food truck in June 2023, and runs it with her daughter, Ciara. She also turns her cookies into ice cream sandwiches.
