If I’ve learned anything from almost 40 days of plant-based eating, it’s that an homage doesn’t have to be indistinguishable from the original to hit the same spot; it simply needs to sing equivalent notes to much the same tune. Those notes, in this case, are a green salad, a thick, umami-spiked dressing and savoury croutons, all tossed in a pitch-perfect combination of flavours (milky lettuce, salty fish, rich fat) and textures (crisp leaves, creamy dressing, crunchy toasted bread).

Described by chef Vivek Singh as “the most common and basic vegetable curry you will find anywhere in India”, aloo gobi (the name means potato cauliflower in Hindi) makes a great vegetable side dish, but it’s also full-flavoured enough to pair with plain rice or flatbreads for a very satisfying (and incidentally vegan) main meal.

Rich, dark and squidgy, this cake is very much an after-dinner, rather than an afternoon-tea affair – something you’ll need a fork for, and quite possibly a spoon, too. Somewhere between a cake and a mousse, it’s the perfect end to an Easter celebration (serve with creme fraiche and chilled sliced blood oranges) and a great make-ahead dessert at any time of year.

The deliciously fussy-looking devilled egg and its pal, the vol-au-vent, were the ghosts of parties past for several decades before their triumphant revival as retro classics. Not only do these old-fashioned canapés look and taste great, but, as we’re belatedly remembering, the boiled egg, in particular, is a nutritional powerhouse far superior to a mere bowl of crisps. Make up to a day ahead, if necessary.

When the other character lets him taste what he has been brewing, White is stunned. “My God, that is the best coffee I’ve ever tasted,” he says.
