When I first got into whiskey years ago, I learned about the stigma surrounding many Canadian whiskies. People often saw them as barely interesting light blends. Still, Canadian whisky had its moment in the U.S. during Prohibition, thanks to the long border that made smuggling easy. Even after Prohibition ended, Canadian whisky stayed popular because Americans wanted lighter spirits. The U.S. even created a "light whiskey" category in 1968 to compete with vodka and imported blends.

Back when I was an American whiskey brand ambassador, I stopped into a liquor store south of Boston to finalize the details of an educational spirits tasting and cocktail class for its clientele. The owner hosted all the brand and distributor representatives who stopped by, as if his side room was a salon where folks could mingle and meet each other as they waited. The owner introduced curious imbibers to new spirits he'd acquired and was fascinated by.

When I started drinking beer in college, almost all the beer I tried was thin adjunct lagers that had little in the way of malt flavors. After graduating and moving to Boston, I was introduced to brewpubs and my eyes were opened. I began to associate rich, flavorful malt that was anything but light and pale with quality through beers like Cambridge Brewing Company’s Amber Ale and John Harvard’s Porter. If I came of age now, perhaps I'd be interested in magnificent hop signatures instead.

One moment that stands out from 2024 that might be the way to think about 2025: when I visited a bar for dinner, at the end, the bartender who I knew asked if I would do a shot with him. His persuading remark was "You never know if this could be our last chance together."
