Chef Diego Oka was surrounded by artists while growing up in Lima, Peru. “My father is an architect and art collector, and my aunt is a sculptor,” Oka said in a recent interview. These days, Oka, the executive chef at the Miami fine dining restaurant La Mar, can count himself among them. In 2020, during the height of the pandemic, Oka put his passion for dishware and cutlery front and center, embarking on a mission to create a menu centered around dinnerware and make each piece by hand himself.
