    The University of Cincinnati College of Arts and Sciences is gearing up for the second annual Sustainability@UC Week to take place Jan. 27th through Feb. 1st. With a week full of events and activities, students, researchers, educators, staff, and the public are invited to participate and get involved in sustainability at UC. The first Sustainability@UC Week was organized by The Center for Public Engagement with Science (PEWS) in January 2024.

    1.To make the pastry, place the flour and butter in a food processor and blitz until it resembles breadcrumbs. Add the icing sugar with a pinch of salt and pulse until combined. Add in the egg yolk with 2-3 tbsp cold water and pulse to bring the mixture together. This makes enough dough for 4 cases - you can bake the tarts then store in an airtight container for a week or freeze them for another occasion.

Place the strawberries in a food processor and blitz to roughly chop. 2.Add in the remaining ingredients (except the desiccated coconut) and blend to a thick paste. 3.Taste the mixture, adding in an extra date for sweetness if required or a little maple syrup. 4. Chill the mixture for 20 minutes to firm up, then shape into balls. 5.Roll in desiccated coconut if using. 6.Store in an airtight container in the fridge for 2-3 days or freeze.
