We strive to eat healthy, yet it is a daily struggle. During our day, it’s hard to find the time and energy to prepare and eat healthy meals on top of all of our other obligations. As an autistic person, I struggle with doing daily meal prep, cooking, and clean-up. It takes so much energy to do those tasks. At the end of my workday, I have zero energy to do anything except reheat pre-made homemade meals, toss together a salad or smoothie.
