On September 6, one of Seattle’s most well-known omakase restaurants is getting a sibling. That’s when ShoMon Kappo Sushi, from the owners of Shiro’s Sushi, is opening in Belltown, bringing a kappo-style sushi experience to the neighborhood. Kappo means “to cook and to cut.” Like omakase and kaiseki, kappo is a multicourse meal (albeit a little less formal than kaiseki) where dishes are left to the discretion of the chef, who prepares the meal at a counter across from the diners.

A new Singapore-based chain has planted its first U.S. storefront in Bellevue, and you may be hearing the name Tendon Kohaku a lot. “Ten” is short for tempura (lightly battered and deep-fried seafood, meat, and vegetables), and “don” is short for donburi (a rice bowl dish). What you’re coming here for, in other words, is a bowl of perfectly crispy, crunchy fried food.
