It’s a good time to be a beer fan who’s choosing to avoid alcohol. Until just a few years ago, consumers who wanted to enjoy the flavor of beer while eschewing alcohol were fairly limited in their options. There were several non-alcoholic beers on the market, but most of them were pretty tepid and uninspiring, lacking in the unique flavors and mouthfeels that true beer enthusiasts crave.

It was only a couple of decades ago that the Old Fashioned, now a mainstay of bar programs across the world, was considered hopelessly, well, old-fashioned. While whiskey and the cocktails associated with it had largely fallen out of fashion by the 1980s and ’90s, the Old Fashioned was going through some questionable deviations. Nonetheless, the original whiskey cocktail prevailed, partly due to its rich and storied history.

Clarified Milk Punch is a drink that bartenders love to serve but hate to make—beloved, yet notoriously labor-intensive. Popping up seemingly overnight on cocktail menus across the country in the mid-aughts, this drink has a history that dates back several centuries. In 1763, Benjamin Franklin sent his favorite Clarified Milk Punch recipe to a friend in a letter. The original recipe involved extensive ingredients and multiple steps, including straining the cocktail through a pillowcase.
