As my passenger train travels through the gorge of the braided Waimakariri River, it seems as if the sky itself is reflected in the river below, so perfectly matched are the colors of heaven and water. It’s just short of breathtaking, I realize in the next moment, when I look up and truly forget to breathe on seeing the magnificent Mount Binser rise above the river in the distance.

As the pile of wood, coconut husks and dried palm fronds burned, waves of heat licked my face while I learned how to prepare palusami.
