With Easter weekend upon us, many families will be celebrating over the next few days. Easter is also a great time to welcome spring and get together over a special meal. At all our special family get-togethers, a potato dish is a must-have. It can be as simple as a big bowl of fluffy mashed potatoes, or something a bit more decadent like this week’s recipe for potato-mushroom gratin. I like that this dish can be made ahead and it really holds the heat when it comes out of the oven.

There can be little argument that pizza is one of the most universally loved foods. There are many spins on pizza, too. Panzerotti is a sort of pizza turnover that are usually deep fried. There are calzones, that often feature ricotta cheese in the filling and they, too, can be deep fried or baked. There are so many choices when you have good dough and good ingredients to go on or in it. My recipe today is for a baked version that features ham, cheese and mushrooms.
