I love thinking about chicken. Specifically, I like thinking about how to cook chicken well. I can trace a line from my Mom's famous sour cream chicken with chives and paprika, to Cook's Illustrated's “easy roast chicken” in its original The Best Recipe, and on to Simon Hopkinson's Roast Chicken and Other Stories, with hundreds of other stops along the way.

Way back in 2018, I went to South Korea for a wedding. While there, I persuaded an elderly friend of my sister-in-law to show me how she made kimchi. When we arrived at her apartment, the living-room furniture had been pushed aside to make space. My ears always perk up a bit when I run across something original for the kitchen. An internal thought process goes from something like there's probably a good reason why no one has ever done this before to how has no one ever done this before? Devices that allow you to do a bit of smoking while indoors pop up every few years, and often end up being a bit too impractical to make many waves, or fun but very niche. It’s easy to understand why manufacturers try.
