1. IntroductionAn unhealthy diet is the leading global risk factor for non-communicable chronic disease, morbidity, and mortality [1,2]. Adopting a healthy lifestyle, including a diet low in meat and high in fruits, vegetables, and whole grains, can prevent up to 80% of chronic diseases and add up to 12–14 years of life expectancy [3,4]. While guidelines recommend nutrition interventions as first-line therapy for chronic disease, many clinicians view them as adjunctive treatment [5,6].
