    The perfect recipe for an easy everyday meal bursting with flavour … This is probably what I cook the most at home as it cooks in one pot and requires very few ingredients, all of which are easily interchangeable. The butter (lima) beans can be swapped for cannellini, chickpeas (garbanzo beans) or tinned lentils.

    Serves 4 Ingredients1 small cantaloupe melon, rind removed, deseeded and cut into 2cm chunks 1 cucumber, cut into 2cm chunks Juice of 1/2 lemon 2 tbsps of your best extra virgin olive oil Salt and pepper A chunk of parmesan Method1. Add the melon, cucumber, lemon juice, olive oil, salt and pepper to a bowl and give it all a good mix. 2. Tip the mix onto a serving platter then with a vegetable peeler, peel off bits of parmesan over the platter.
