My go-to method for preserving okra is to freeze it so it’s ready to go in the frying oil. This is super easy. Wash the pods with water, and then cut them into 1/2 -to-3/4-inch slices. Then, put the slices in a gallon-sized freezer bag with a small amount of plain cornmeal in the bottom. Seal the bag, and shake it to coat the pieces with cornmeal.

Maggie's favorite okra pickles. 4 cups water2 cups vinegar (5% acidity)1/3 cup pickling salt2 teaspoons dill seeds3-1/2 pounds small, freshly picked okra pods7 cloves garlic7 small fresh hot peppers Combine water, vinegar, pickling salt, and dill seeds in a saucepan. Bring to a boil. Pack okra into hot, sterilized jars, leaving 1/2 inch headspace. Place 1 garlic clove and 1 hot pepper into each jar. Pour boiling vinegar mixture over okra, leaving 1/2 inch headspace.
