“You have this man named Charles Clarke, and he has Clarke’s Pure Rye,” Lubbers says. “He has a big distillery out in Peoria, Illinois, which is on the banks of the Illinois River. And to this day, there is one of the world’s largest stills in Peoria, Illinois, and that is at Archer-Daniels-Midland, and they make neutral grain spirits. Mr. Clarke, though, wanted to have a monopoly on the whiskey business. So he started to organize this Whiskey Trust. He didn’t care about the quality of the whiskey.

Milam & Greene is based in Texas, but not all of their whiskey is made in Texas — they are making a lot of whiskey through contract distillation in Kentucky. Blending the barrels of whiskey from Kentucky and Texas gives co-Founder, CEO, and Master Blender Heather Greene blending options. Now they’ve engaged in an experiment to determine how barrels matured in Kentucky differ from barrels of whiskey matured in Texas.

American whiskey producers all over the country are experimenting with barrel finishes, and non-distiller producers are finding that well-done barrel finishes can set their sourced whiskey apart from the rest. Secondary new barrels have even less historical relevance within the American whiskey industry.

Different groups have different approaches to choosing a single barrel. Some will collaborate from the start while others will secretly take notes and then come together when everyone is ready. Some will vote, some will rank choices, and some will assign numerical values to be averaged out with the most points choosing the winner. After you’ve chosen your single barrel, the group chooses the name that will go on the stickers on the front of all of the bottles.
