Method Preheat oven to 425°F. On baking sheet, toss potatoes with duck fat; season with salt and pepper. Spread potatoes and carrots in single layer on baking sheet; bake, stirring halfway through cooking time, for 20 minutes. Meanwhile, in bowl, stir together hoisin, marmalade, ginger and five-spice powder until smooth; set aside. Move potatoes and carrots to one side of baking sheet; arrange parsnip, squash and shallot in single layer on other side. Place duck legs on top of potatoes.

Method Preheat oven to 375°F. In bowl, combine cranberries, sugar and vinegar; set aside. In large oven-safe skillet or shallow Dutch oven (at least 12 inches in diameter), heat 2 tbsp of the oil over medium-high heat. Add turkey, skin side down, and sear, turning halfway through cooking time, about 6 minutes. Transfer turkey to plate. Deglaze skillet with wine and bring to boil, scraping up brown bits from bottom of skillet with wooden spoon. Return turkey to skillet, skin side up.

Method Set pressure cooker to Sauté function. Pour in oil and add onion, red pepper and chili powder; cook for 2 minutes. In even layers and without stirring, add beans, then salsa, then rice. Season with salt and pepper. Gently pour in 1 cup water. (If rice is not submerged in water, add more until it is.)Seal pressure cooker lid and select the Rice function (or high-pressure cooking for 5 minutes). Allow steam to release naturally for 10 minutes, then open lid. Stir to combine and divide among bowls.

Method Preheat oven to 400°F. Spray baking sheet with cooking spray. In bowl, break up salmon with fork. Add yogurt, bread crumbs, egg, roasted red pepper, green onions and dill; season with salt and pepper. Mix well to obtain a thick and slightly sticky mixture. Using hands, form eight 3/4-inch thick patties and place them on prepared baking sheet. Lightly spray patties with cooking spray.
