Technique tips: When it comes to the dough, warm means 105 to 115 F. Shaggy dough is lumpy yet well-mixed, with no dry spots of flour. It's a loose ball but not smooth. It looks like a sticky mess.

The taste for aioli and mayonnaise can be widely seen across Latin American food: Cuban arroz imperial, Mexican elote, Dominican ensalada rusa and Argentinian salsa golf (also known as salsa rosada or mayochup). It is also perfect to serve as a dipping sauce for these golden, crispy yuca fries or my Central American-Style Fried Chicken.
