1 INTRODUCTION The principles of organic farming emphasise natural processes and forbid artificial inputs, in particular, the use of mineral nitrogen (N) fertilisers. Consequently, organic growers rely on the addition of manures and composts, as well as N-fixing plants, to provide sufficient N to support production (Goulding et al., 2008). These organic N sources require biological processes to convert the N into forms usable by crops.
