Juelz Ramirez has held a lot of titles for a 32 year old: Entrepreneur and Creative Director (for Daily Dose 719), volunteer (with Rise Southeast and Transforming Safety), bartender (formerly at Legends), barista (formerly working at Switchback Coffee) and now owner — of Stompin’ Groundz, a new coffee shop on the Springs’ Southeast side. It soft opened on June 29 and will celebrate an official grand opening from 9 a.m. to noon on July 6, with food and drink, music and dance.

We’ve waited more than two years, and the day is finally here: April 25. Colorado Springs’ Illegal Pete’s location will open (after two soft-service days). It’s under Lulu’s Downtown at 32 S. Tejon St., and will be the Boulder-launched brand’s 14th location. Aside from a pair of Arizona spots (in Tempe and Tucson), all Illegal Pete’s eateries are in Colorado, concentrated mostly around Denver.

You know how restaurants get in the weeds? Ticket times start running long and the expo starts to sweat and the mood in the kitchen drops. The yelling starts. A sauté pan or two goes flying in some direction. Good times. In better circumstances, stoicism wins the day. Or call it professionalism. Either way the food eventually gets to tables and calm returns. Well, until the next rush. Sometimes it’s like that as a writer.
