I’m sitting in Sayers Café on Bold Street: a forerunner of Greggs (heck, it might actually be a Greggs now) with a cake counter at the front, a self-service, strip-lit canteen-style café towards the rear, and acres of formica-topped tables and fixed plastic seating in between.
