In Mallorca, Spain, the company Salinas d’Es Trenc produces 10,000 tons of salt each summer, preserving a nurturing wildlife refuge and one of the largest undeveloped private waterfront properties on the island. On a recent visit to Mallorca, I was a Salinero for one afternoon.
