If you are a rhubarb lover, you are going to want to make these simple and delicious bars this season. Rhubarb season is such a short one, it starts to appear in April and reaches its peak in June — as long as we have rain. During that time, I love to make as many rhubarb foods as I can. The recipe that follows is one that I make year after year. This recipe is what I would call the “fig newton” type of rhubarb bar. I guess that is kind of what it reminds me of.

Hopefully, you find something useful here for something that is currently sitting on your countertop.

Our family has always been a family of leftover eaters. When I was growing up, I remember my mom telling me once that a family friend of ours didn’t ever eat food leftovers. I always wondered what they could be doing with all that leftover food. The problem with leftovers is that they were given a name other than food. When we call them ”leftovers,” it sounds like they are something no one wanted. Something that isn’t very good. But food is food.
