Lunch hour was bustling on a recent weekday at Mulligan’s Bar & Restaurant in Redding. Owners Lynn and Brad Blevins chalk up the restaurant’s recent surge in popularity to a refreshed menu and a rush of favorable online reviews. At one table, a party of seven golfers taking a break from the adjacent Club Tucker Golf Course played a lively game of Liar’s Dice. A group of law enforcement officers on their lunch break filled another table.

There’s a new Mexican restaurant in town called La Conquista Taquería. While the business is new, its location on Eureka Way in west Redding has been home to Mexican eateries for years. Customers dropping by may be doing a double-take, seeing the new colorful sign and white paint on the wall beside the outdoor patio. For the past seven years the place has been La Cocina de Chuy and before that, locals will remember it as El Rinconcito.
