I don’t know about y’all, but this hot weather is exhausting. I know we haven’t had it very long, but it seems like time moves a bit slower when it’s hot outside. I’m always up for going back in and getting a sweet treat. I remember having to walk all over our college campus in August and September when it’s still hot outside. Every day I would come back to my dorm and the first thing I would do is break out a popsicle to help me cool down.

Kids are out of school, and ready for an adventure this summer. One of my favorite parts of the summer was spending time with my brothers. We would play baseball, kickball, swim, and jump on our trampoline outside. Inside we would play video games and watch movies. Somehow my brothers always managed to convince me that I needed to cook for us. I guess that may have been the start of my love of cooking. This week, I made soft baked pretzels for the first time.

It’s finally the end of the school year, and classroom parties are happening all over the place. I remember planning for our classroom parties and making promises to make some goodies for the next day. It was also usually the day we got our yearbooks and wrote about what a great year it had been and how much you were going to miss your friends until August. It was always sort of a bittersweet moment, saying goodbye to classwork for a while, but also saying goodbye to your friends.

Mac and cheese is an ultimate comfort food for so many people, myself included. The cheesy dish has always been a staple in our house, but most of the time we used Velveeta or Kraft. When I went off to college, I decided I wanted to try and make it myself in my dorm using my instapot, which is no easy feat since I wasn’t supposed to have an instapot in my room. I would always try and make different dishes for my supper using my toaster oven, instapot and electric skillet.

Graduation season is right around the corner, and I know some parents are about to start panicking. I remember my mom trying to plan out all of our graduation parties and stressing over food, invitations, the party, what to wear and what time. May is a very busy month after all. An easy but elegant addition to your graduation party would be focaccia bread. Focaccia bread is one of the trending appetizers right now. The best thing about this bread is that it’s very versatile.
