The culinary team from B.C.’s Naramata Inn have shared their tips – and recipe – on how to make the perfect turkey. Bring your turkey out of the fridge for about 1 hour before putting it in the oven. Heat transfers more easily through a room temperature bird and will give you a more consistent and juicy product!  Let your turkey rest after the oven for at least 30 minutes. This gives the meat a chance to reabsorb all the moisture before you carve it.

Honestly, this is a fan favourite burger in my house. It’s a true celebration of the bounty of British Columbia. In this recipe, I use wild Pacific halibut, Rad Jamz jelly, and Windset Farms produce. By supporting our local fishers, farmers, and artisans, we are helping our neighbours—and helping to keep dollars in our local economies. Wild Pacific halibut is sustainably managed and rich in nutrients; it supports both your health and the environment.
