It’s a sunny day at Global Food Project gardens in Iowa City, Iowa, and Emmanuel Gauthier Mfuankatu is showing off the plot of land where, for the past two years, he has been raising food following Congolese traditions. “Here, I am learning, and I am teaching, using my body and being in the natural world,” Mfuankatu said. Originally from the town of Mbanza-Ngungu in Congo Kinshasa, a name often used to refer to the Democratic Republic of Congo, he immigrated to Iowa City in 2016.
