The viability of L. plantarum 75 in coated cantaloupe melon fresh cuts was notably influenced by the simultaneous intake of Natal plum and beetroot leaves. The bioaccessibility of cyanidin-3-glucoside and cyanidin-3-O-sambubioside was enhanced in co-digested cantaloupe melons coated with probiotic coating and Natal plum. Co-ingestion of probiotic-coated cantaloupe with Natal plum or beetroot leaves improved antioxidant activities in the intestinal phase.
