Hello Readers! I would like to start off today with a clarification about last week’s column of Kathryn Choate’s recipes. Credit for those recipes should have gone to Marilyn Smith who so graciously shared recipes and memories of Kathryn with me. Hello, Readers! There are quite a few interesting recipes for you to try this week! All the cakes are interesting, but I am especially pleased to have another tomato dumpling recipe. Helen Cochran turned me on to them a few years back, and since then I have enjoyed collecting different variations of the recipe. This one is spicy and good, and you can make it to suit yourself as far as the sugar and the spices go.

Some time ago I gave you a delicious potato soup recipe from Janice Franklin and often I am asked for it. I can tell you for a fact that it is something you’ll enjoy! I will have to confess that I really did not care much for potato soup until I tried this one and now I am a convert.

It is mostly about EASY again this week, but first I must tell you about two special recipes this week. Some time back Jan Taylor Phillips sent along two treasures—one is the White Pound Cake from Irene Dooley, whom some of you will no doubt remember. The second recipe is from Jan’s grandmother, Ruth Brown Pierce. They are true “heirloom” recipes, and I appreciate Jan’s sharing them. I am also including this week an old favorite—the Thunderbird Roast which is easy and delicious.

Dear Readers, Patsy Huffaker recently sent this Christmas Greeting to me. When my mother was in the nursing home she sent this to Nurse Patsy who has kept it all these years, and today I want to share it with you. This Christmas hold those dear to you close in your heart whether they are still here or gone on. Gladys’s Old Fashioned Custard Pie3—4 eggs, slightly beatenAdd 2/3 cup sugar2 ¼ cup milk2 tsp. vanillaBeatPour into 9-inch pastry shell. Sprinkle with nutmeg. Put onto a baking sheet for overflow. Bake at 450 for 10 minutes. Then bake at 350 to finish. Bake until a silver knife inserted into the center comes out clean. About 40 minutes total baking time. Will firm more as it cools. Gladys’s Sour Cream Filling for Yellow Cake—simple but truly delicious.

Some time back Lela Solomon gave me the recipe for the White Snowflake Cake, and it quickly became a favorite easy cake. I know you’ll love it. Lela says it make wonderful cupcakes, too!Not long ago I had Margaret Jackson’s Orange Marmalade Cake, and it was truly delicious. It seemed to me to be a perfect cake for Christmas celebrations.

Last week the column had some typical Thanksgiving recipes, but the focus today is on diabetic cooking for Thanksgiving! Some time ago, I received a really nice letter from Rosemary Jordan in Evensville, and she sent in two delicious-sounding recipes to share, and I am happy to have them as I plan to try them both this week! I am including them this week along with other diabetic recipes just in time for holiday meal planning.
