Jens Dahlmann, VP executive chef of Universal Orlando Resort, comes from a long line of chefs — his grandfather a pastry chef and his father also a chef. He started his career with a three-year apprenticeship in Düsseldorf, Germany, and worked across Germany, Switzerland, Southeast Asia and the Mediterranean, developing a love for Asian cuisine.
