We opened an oyster bar in the sand in Greenport, New York, last year and this was one of our most popular dishes. Making and eating this refreshing ceviche gets me excited for summer.

    PreparationFor the pizza dough:1. Mix yeast and water; let sit until the mixture becomes foamy. 2. Add flour to the basin of a tabletop mixer (i.e., Kitchen Aid) and mix at #1 speed for 10 minutes. 3. When time has elapsed, turn up mixer to #2 speed and mix for another 5 minutes, slowly adding the fine sea salt. 4. When fully incorporated, turn off the machine. Using a plastic bench scraper, scrape the bowl to make sure there are no dry spots and mix once for 1 minute to fully incorporate. 5.
