1 IntroductionPeas (Pisum sativum L.), one of the four major global legume crops in the world, are rich in protein, fiber, and other key nutrients, providing an important food source for humans and animals(Cousin, 1997; Dahl et al., 2012). Their rich dietary fiber and antioxidant contents and important biomolecules have significant potential in promoting health and preventing chronic diseases (Devi et al., 2023).
