Overview of Microbial Fermentation in the Food and Beverage IndustriesMicrobial fermentation is a metabolic pathway where carbohydrates, e.g., sugars, grains, or any food made of the same carbohydrates, are turned into alcohols, gases, or acids in the absence of oxygen [1]. Fermentation is used in a wide variety of foods and drinks to preserve food, improve flavor, and enhance texture, in addition to providing nutritional diversity.
