Scotch whisky is booming, and production must expand to meet the growing demand, but consideration of the effects of past production peaks and troughs suggests that producers would benefit from targeting a more sustainable growth rate. Premiumisation and growing demand have led to a dramatic decline in inventories, particularly of malt whiskey aged more than nine years, which fell more than 25 percent from 2007 to 2012, with no signs of slowing demand.
