WE are in full calçot season. These giant spring onions are cultivated in Valls, near Tarragona and are enjoyed from Figuerès to Fuengirola. At this time of year, people drive for miles around Catalunya to enjoy char-grilled stems which are often served in newspaper or on terracotta roof tiles. Once you´ve peeled off the outer part you´re left with a tender gooey stem. Farmers from the town of Valls in Tarragona were the first to harvest these onions.

FROM the bouillabaisse fish soup of Southern France to the biryani rice dishes of South Asia there is a common thread (literally); the dried stigma threads from the crocus flower known as saffron. Saffron Walden in Essex cultivated the spice until 1768 when cheaper Continental imports cannibalised the British market. Here in Spain, no self-respecting quality paella would be complete without the reddish hues and earthy flavour of Spanish saffron.

I CAN and have eaten snake’s blood for lunch and worms for dinner but breakfast is sacred. On a weekend, ideally it would include lashings of Bovril drizzled over hot-buttered brown toast…I could push it to the Holy Grail of crispy crumpet at Christmas….or perhaps even a sneaky Welsh cake with a full height glacier of Rodda‘s clotted cream on a whistle-stop trip over to Blighty. However, let’s face it, we’re less adaptable at this mealtime.

WHEN I first landed on Spanish shores at the end of the 1980s it was very difficult to find any snacks on the street, especially in train or metro stations. I had grown up grabbing the odd Marathon/Snickers to line the stomach whilst en route to school or to the pub after work. Yet over here Twix and Mars bars are largely confined to bulk packs in supermarkets; the antithesis of spontaneous snacking.
