This area of France perfectly blends the old with the new, and should be on your radar this summer. A church bell breaks the Sunday morning silence, and, as if on cue, pale blue shutters creak open across the houses in the village square.

We started with Schrenckii Dauricus caviar alongside the usual accoutrement of diced onion and capers… and a side of fries from the shareable starters menu. I don’t quite know how to say this but the chips were the star here. Don’t get me wrong, the caviar was perfect – delicious, luxurious, creamy salty but I’ve never actually had chips that taste this good. Cooked in tallow, they were crisp, flavourful and with just a whiff of truffle, so good we greedily ordered more.
