    Whiskey is distilled nowadays in all 50 states — legally, that is — which is kind of crazy when you consider that less than 25 years ago, even my home state of New York was fighting for the right to be able to do so. The last 10-15 years have been a golden age for regional craft distilling, and if you’re looking for peated Maine single malt, oat whiskey from Chicago, or rye from Alaska, it’s all out there.

    It was just a couple of months ago, as I write this, that the venerable Bushmills distillery announced the release of the oldest Irish single malt whiskey ever bottled — a 46-year-old sherried malt almost the color of Coca-Cola, with a suggested retail price of $12,500. It was a very big deal... but only a few weeks went by before it was upstaged by the sixth and final release in the Midleton Very Rare Silent Distillery Collection, a single pot still whiskey aged for a cool half-century.

    For Thai cuisine in New York, it feels like there are two eras: Before Fish Cheeks and After Fish Cheeks. Before, menus at Thai restaurants were pretty interchangeable: Pad Thai, Massaman curry, satay and the like. Fish Cheeks, founded in 2016, blew that template up, with its emphasis on traditional seafood dishes, inventive cocktails, and conspicuous lack of standard Thai-merican dishes.
