Tyler Malek is known for his wild ice cream concoctions. The cofounder of Portland-based Salt & Straw (which has expanded to five states outside of Oregon and six locations in Oregon) has been increasingly driven not just by Oregon’s culinary bounty but the massive amount of food scraps that might be considered waste. Some of this includes perfectly good bread or donuts that were baked fresh, but can’t be sold as fresh the next day by grocery stores.
