Vitamin B12 (B12 or cobalamin) is an essential water-soluble vitamin derived from animal-based diets which function to regulate two immediate cellular processes in one-carbon metabolism and Krebs cycle(Reference Stabler1–Reference Green, Allen and Bjorke-Monsen5). The absorption of dietary B12 requires gastric intrinsic factor (GIF), a stomach-specific protein(Reference Nielsen, Rasmussen and Andersen4).
