    In Jewish homes around the world, as the sun sets on Monday night, the Passover Seder begins. This ritual marks the ancient Jewish exodus from Egypt, leaving behind a life of slavery and heading toward a new beginning. The most well-known symbol of the holiday is an unleavened baked good known as matzo. It's made of only flour and water. It's as flat as a sheet of cardboard. And it's a reminder of how those Jews fled so abruptly that they did not have time to let their bread rise.
